Yummy Homemade Alfredo Sauce

This is some VERY impressive homemade sauce! If you ever are looking for the taste of Olive Garden's Fettuccine Alfredo then this sauce qualifies!!! It is SO much better than the store bought kind and is the best of other recipes I have tried to make. It is pretty simple too. I added spinach and chicken to mine and also used this recipe to make Chicken Alfredo Lasagna Roll Ups)



4T Butter
1 clove fresh garlic, minced
2T flour
2 C Cream
1/2 C. milk
1C Fresh grated Parmesan
In a medium sauce pan heat butter and garlic and add flour once butter is melted and aroma of garlic is building. Add the Cream and milk and stir then add the Parmesan and bring to a boil and continue to stir frequently over a medium low heat as it boils and thickens. (I added a dash of pepper to it as well)
Serve with your favorite pasta. Add chicken or steamed broccoli (or spinach) if desired for a variation.

Teriyaki Marinade

This is a simple sauce but the results are anything but!

1/2 cup soy sauce
1/4 cup brown sugar
1 tsp ginger
1/8 tsp garlic powder

Marinate meat for several hours and/or stir fry veggies. Cook as desired. Can cook meat and veggies with the marinade.

We made teriyaki chicken with this marinade. It was the best chicken I've ever had. We "tenderized" the chicken pieces by poking it a fork over and over. Then we put them in a large ziploc bag and allowed them to marinate for 6 hours. However, we did reserve some sauce to brush over the chicken while we grilled. The chicken was extremely juicy and tender. If there are leftovers, they're great for salad!

Spaghetti Sauce

My sister-in-law's mother made this sauce and it was so good. Pretty simple, too. Close enough to homemade for me! Sorry there isn't a picture. I didn't have my camera with me. You'll just have to trust me that it is good!

1 6 oz tomato paste
1 16 oz can crushed tomatoes
1 jar Ragu spaghetti sauce with mushrooms
Fresh mushrooms, cut up to desired size
1 pkg Johnsonville brand mild italian sausage (this brand is the best for this sauce)
Garlic gloves, minced
Onion, minced
Olive Oil
Parsley
1 Tbsp Butter
Sprinkle of sugar, if needed

Brown sausage, onion, and garlic with a little olive oil and parsley. Add fresh mushrooms when the sausage is almost done.

Add Ragu sauce, tomato paste, and crushed tomatoes. Let simmer until desired consistency. Add butter and sugar (if needed) at the end. Serve over hot spaghetti noodles with breadsticks or garlic bread.

White Sauce

--a recipe to help you use your powdered milk in your food storage

Boil 3 cups water

Separately mix:
3 cups water
1 cup plus 2 Tbsp non-instant dry powdered milk
1 1/2 cups flour
1 tsp salt
1 tsp pepper

Add flour mixture to the hot water in the pot on the stove. Stir constantly with a whisk until desired thickness. Add 6 Tbsp butter or olive oil for flavor.

(Dry ingredients could be mixed in larger quantities and stored to be ready for use when needed.)

Buttermilk Syrup

Oh man... this stuff is sooooo good!

1/2 cup butter
1 cup sugar
1/2 cup buttermilk
1 tsp. karo syrup

Combine all ingredients in a 3 qt pot. Using a whisk, stir often.
Bring to a boil then remove from heat. Stir in 1 tsp. baking soda and 1 tsp. vanilla. It will foam up so make sure you have a good size pot, not a small one! Then, leave it alone. Don't stir it anymore. Use spoon to serve over waffles, pancakes, french toast, or whatever!!!
After it sits for a bit, it will begin to look like this, and it's still good: Refrigerate leftover and reheat in the microwave when you need it. This is also good for scones. When it is cold and sets up, its great to just scoop some up and spread it over warm scones or muffins. I haven't tried it on ice cream but some people say it's good.

Teriyaki Sauce

1/2 cup soy sauce
1/4 cup brown sugar
2 Tbsp oil
1/2 tsp Accent (I never have this on hand, so I don't use it)
1 tsp dried ginger
1/4 tsp pepper
2 cloves garlic (I use dried minced garlic if I don't have fresh on hand)
3 Tbsp vinegar

Mix all ingredients for marinade. Cut meat into cubes. Marinate for several hours or overnight. Cook as desired.

This is a great teriyaki recipe. I've used it for chicken, beef, pork. It is great for skewers or for chicken on the grill.

Orange Glaze for Angel Food Cake

3 egg yolks
1/2 cup sugar
1/2 cup orange juice concentrate
1 Tbsp orange zest

Mix together in pan and cook on medium heat until thick. Remove from heat and cool. Add 1 cup whipped whipping cream and 1 tsp sugar. Stir all together and serve over angel food cake.

This makes a lot but it can be refrigerated and used again.

Homemade Ranch Dressing (a.k.a Mormon Dressing)

1 qt mayonnaise
3 cups buttermilk
1 Tbsp pepper
1 Tbsp accent
1 Tbsp garlic salt
1 Tbsp onion powder
1 Tbsp parsley

Mix all together and enjoy!
