1/2 cup butter
1 cup finely chopped pecans
1 cup flour
1 (8 oz.) package cream cheese, softened
1 (16 oz.) container Cool Whip, divided
2 (4 oz.) packages chocolate instant pudding
3 cups cold milk
shaved chocolate (optional)
Preheat oven to 350 degrees. In a medium bowl, combine butter, pecans, and flour with your hands. Press into bottom of a 9x13" baking dish. Bake for 15-20 min, or until light brown. Cool completely. In a large bowl, beat cream cheese with a mixer for 1-2 minutes. Fold in half of the Cool Whip. Carefully spread mixture over the the crust (the crust breaks apart easily at this point). Beat pudding mix and milk for 2 minutes then spread over the cream cheese layer. Spread the remaining Cool Whip on top. You can garnish it by sprinkling extra pecans and shaved chocolate over the dessert. Refrigerate overnight, or at least a few hours. Cut and serve...Get ready to bust your girdle!
